“Sugar: Why do our mouths desire sweetness? Basically, it’s because we can’t eat sunshine. We have to rely on plants to convert the sun’s energy into sugar, a form we can eat and savour. Sugarcane (in the tropics) and sugar beets (in the temperate zones) are the most efficient converters of energy from the sun into sugar. Sweetness in the form of refined sugar is a recent invention; concentrated sugar has only become available to human bodies in quantities in the last 150 years, as a result of large-scale cultivation of these two plants.” (Jan Chozen Bays, Mindful Eating, 2009.)
